I think thats because all the missions they play are already set up and they probably accidentlly showed that on camera. Because do you really think they can get all the missions they play set up in 1 night after taking down the old mission? No, so they probably make the missions ahead of time and just try not to show them on camera so it looks like a new mission or something like that.

Completely true.

Using your example, at even the same part of the season, I think you can actually see missions from several days ago, if you know where and when to look.
